Stupidly Easy Flax Chips (keto/paleo/atkins/gluten free/any dietary reduction practically friendly)
- 1 cup flax meal
- .5 cup water
- a dash worth of whatever seasonings you fancy
That’s it. For reals.
Mix ingredients together in a bowl and promptly combine.
Leave the bowl alone for 5-10 minutes.
Put parchment paper on a cookie sheet. Roll dough into small balls. Using another small square of parchment paper and a spoon, smoosh balls down to chip thickness. The thinner, the better. Feel free to also sprinkle seasonings/hard cheese on top at this point.
Throw into an oven at 400*F/205*C on a middle rack for 8-10 minutes and keep an eye on then like an overly protective parent. DO NOT BURN THEM. You will be sad.
Once you finish baking all of them, turn off oven and pile all the chips onto one baking sheet and let them sit in the oven to dry them out so they’re crispier.
Accompany with dips, guacamole, taco stuff, etc and revel in the crispness.
They, however, are not heavy load bearing chips, so be cautious while using them as a shovel for your mouth.
Macros: 640 calories, 44.8g fat, 19.2g protein and 0g net carbs (sans spices/toppings) for the entire recipe. Yields about 60 chips, depending on chip size.
